Meat-free Ingredient Substitute

Gelatin--> Agar-agar (sea vegetable powder or flakes), arrowroot (starchy powder from tropical tuber), ground nuts and seeds, gums (guar gum is from an East Indian seed, xanthan gum is from corn), kudzu (starchy powder from tropical tuber).

Meat--> Beans, cheese, seitan (wheat meat), tempeh (cultured soy food), textured vegetable protein (TVP), tofu.

Meat, chicken or seafood stock--> Apple, cranberry, orange or pomegranate juice, beer, Dr. Bronner's mineral tonic, garlic broth, miso (fermented soybean paste) diluted with water, sherry, vegetable bouillon cubes, vegetable stock, water in which beans, pasta or vegetables have been
cooked, wine.

Seasoned or smoked meats--> For sausage, substitute crumbled tofu seasoned with fennel, parsley and garlic. For smoked meats, substitute canned chipotle chilies, oven-roasted vegetables, toasted nuts, smoked tofu or smoked cheeses.



Vegan Ingredient Substitute
Buttermilk--> Clabbered soymilk (to clabber, mix 2 tsp lemon juice or white vinegar per cup of soymilk).

Cheese--> Soy- and nut-based cheeses.

Cottage cheese/ricotta--> Crumbled tofu.

Eggs--> Crumbled or pureed tofu.

Mayonnaise--> Tofu mayonnaise.

Milk--> Nut milk, rice milk, soymilk.



Low fat Ingredient Substitute
Creamed soups and sauces--> Arrowroot (starchy powder from tropical tuber), kudzu. Use roasted, pureed vegetables as a base, then finish the soup or sauce with nonfat strained yogurt.

Oil in baked goods--> Applesauce, pureed bananas, pureed stewed prunes.

Oil for sautéing--> Apple juice, sherry, vegetable stock, wine.

Salad dressing--> Citrus juice or cider vinegar thickened with pureed roasted red peppers, carrots, onions or garlic.

Sour cream--> Strained nonfat yogurt.

White sauce--> Pureed white beans.



Yeast-Free Ingredient Substitute
Bread--> Baking soda breads (quick breads), flatbreads, muffins, sprouted breads.

Salad dressing (wine-or vinegar-based)--> Puree citrus juice and avocado, Puree citrus juice and oil, Mix peeled, cubed fruit such as mango, oranges and papaya into green salads

Vinegar--> Cranberry or pomegranate juice, lemon or lime juice, mango powder (amchoor), tamarind paste or pulp, vitamin C powder (ascorbic acid).

White sugar--> Bananas, barley malt, brown rice syrup, date sugar, dried fruits, fruit juices, maple syrup.



Allergy Ingredient Substitute
Butter--> Clarified butter (milk solids have been removed), olive oil, sesame oil.

Chocolate--> Carob.

Cow's milk--> Almond, goat, rice and soymilk.

Cow's milk cheese--> Cheeses made from soy, nuts, goat or sheep milk.

Eggs--> Egg Replacer; liquid lecithin with 2 tsp guar gum; baking soda plus pureed fruit or vegetables; and flax seeds pureed with water.

Peanuts--> Almonds.

Wheat flour (for baking)--> Barley, buckwheat, corn, kamut, oats, rice, rye, spelt.

Wheat pasta--> Corn, kamut and spelt pasta, rice noodles.



Ethnic Origin Ingredient Substitute

Cactus pads (nopales)--> Green beans, okra.

Chayote squash--> Yellow or green pattypan squash or zucchini.

Masa flour--> Mix corn flour with lime juice.

Poblano or Anaheim chilies--> Minced jalapeno chili and green bell pepper.

Posole (dried hominy)--> Canned white hominy.


Asian~~~
Bok choy (Chinese white cabbage)--> Beet greens, kale and Swiss chard

Chinese cooking wine--> Dry sherry.

Chinese five-spice powder--> Anise seed or star anise, fennel seed, cinnamon, black peppercorns and whole cloves. (If you have a mortar and pestle or electric spice grinder, use whole spices, otherwise use ground dry spices.).

Galangal (Thai ginger)--> Fresh ginger.

Lemon grass--> Lemon zest.

Lotus root--> Jicama or water chestnuts.

Mirin (Japanese rice wine)--> Sweet white wine.

Nam pla (Thai fish sauce)--> Soy sauce and lime juice.

Rice wine vinegar--> Cider vinegar, white wine vinegar.

Sesame oil--> 1 Tbsp sesame seeds fried in 1/2 cup vegetable oil.

Thai basil--> Italian basil.

Water chestnuts--> Jicama.


Indian~~~
Atta (chapati flour)--> 1/2 cup all-purpose unbleached flour plus 1/2 cup sifted whole wheat flour.

Chana dal--> Split yellow peas.

Curry powder--> Mix together to taste ground ginger, cumin, coriander, fenugreek, turmeric and fennel.

Garam masala (mixed spices)--> 1 tsp. cardamom seeds, 1 Tbs. cumin seed, 1 Tbs. coriander seed, 2 tsp. black peppercorns, 1 tsp. cinnamon, 1 tsp. cloves, 1 tsp nutmeg. (If you have a mortar and pestle or electric spice grinder, use whole spices, or mix together ground dry spices.)

Jaggery (coarse palm sugar)--> Date sugar or brown sugar.

Toor dal, urad dal, mung dal--> Red lentils.



Mediterranean~~~
Broccoli rabe (rapini)--> Broccoli plus arugula or dandelion greens.

Cannellini beans--> Great Northern beans, navy beans, red kidney beans.

Fava beans, dried--> Butter beans.

Fava beans, fresh--> Fresh or frozen lima beans.

Fennel--> Celery plus some fennel or anise seeds.

Parmesan cheese--> Any hard, aged grating cheese such as Asiago or Romano or aged Monterey jack.

Pine nuts--> Walnuts or a mixture of walnuts and almonds.


Alcohol-Free Ingredient Substitute

Red wine--> Pomegranate juice; 1/2 cup water plus 2 tsp balsamic vinegar.

White wine--> Apple, carrot or bell pepper juice, vegetable stock.

Wine or beer--> Non-alcoholic wine or beer.

What is the Hoodia Diet?

So you are looking into trying a new trendy diet? I mean there
are tons of them out there to chose from, right? There aren't
many that haven't been tried. Well this one you may not have
even heard of. How does cactus sound for a diet? This new
product called Hoodia is appetite suppressant.

They say that it is not the tastiest of choices. It looks like
a cucumber and grows in dry heat. They also say that it can take
as much as five to seven years before it can truly develop. This
plant actually grows in Africa in the Kalahari desert. Also it
grows in Botswana, Namibia and Angola.

In ancient days they would peel the plant and eat it to curb
your appetite. There are about twenty different kinds of Hoodia
Gordonii plants. Significantly enough there is a small molecule
that actually makes this seemingly legit. With all of the diets
going on, who knows? You always must be skeptical when trying
these diets. They are always so wishy washy and are good about
making you feel like you are really going to lose the weight.

It is found in a diet pill called Trimspa and can come in the
form of a capsule, powder, liquid and even tea. Pfizer bought it
in 1998 for 21 million. If you are willing to give it a go, you
may or may not get results that you want.

Weigh all of the pro's and con's about it. How much does it
cost? Are there others who have tried it and gained results by
it? Look for testimonies and the results of others. You have a
right to be skeptical. There is a lot of hoopla going on about
these diets and you could very well be wasting not only your
time but your money as well.

Sometimes going natural is the best thing to do. Do you want to
suppress hunger? There are all sorts of pills and potions out
there that will suppress your hunger. That should give you
something to ponder. I mean they say don't knock it until you
try it. I say be skeptical. It's your health and your money!

This is not to say that Hoodia will not work. Far from that,
many people around the world have used Hoodia to help appetite
suppression and lost weight. The key to all this however is to
realise that a good exercise and diet plan in also a big part of
the puzzle. Most people hate calorie counting as it can get very
cumbersome and as a result give in to their hunger.

If you decide to take Hoodia, you should consult your doctor,
just like if you started any other medication. There are no
studies to show that Hoodia has side effects but you can never
take too many precautions. It is also important to point out
that pregnant women should not take Hoodia. Be sure to check out

Water is an important structural component of skin cartilage, tissues and organs. For human beings, every part of the body is dependent on water. Our body comprises about 75% water:

  • The brain has 85% water,
  • Blood has 90% water,
  • Muscles have 75% water,
  • Kidney hass 82% water and

The average adult loses about 2.5 litres water daily through perspiration, breathing and elimination. Symptoms of the body's deterioration begins to appear when the body loses 5% of its total water volume. In a healthy adult, this is seen as fatigue and general discomfort, whereas for an infant, it can be dehydrating. In an elderly person, a 5% water loss causes the body chemistry to become abnormal, especially if the percentage of electrolytes is overbalanced with sodium.One can usually see symptoms of aging, such as wrinkles, lethargy and even disorientation. Continuous water loss over time will speed up aging as well as increase risks of diseases.
If your body is not sufficiently hydrated, the cells will draw water from your bloodstream, which will make your heart work harder. At the same time, the kidneys cannot purify blood effectively. When this happens, some of the kidney's workload is passed on to the liver and other organs, which may cause them to be severely stressed.

Brangelina seperating, Rumors?

Brangelina rumors have been getting uglier lately, as rumors continue to grow that Brangelina is about to be no more. Brangelina breakup rumors have been circulating for a while now, with continued gossip about Brad and Jennifer, Brangelina's trip to Cannes, and whether Brangelina still sleeps in the same bed. For now, the official word is that Brad Pitt and Angelina Jolieare still together. However, the two have not been spotted together as much lately, and when Brangelina was together in Cannes, they were rumored to be fighting all the time.

Pitt and Jolie each have separate projects going on right now, and Pitt just finished work on Quentin Tarantino'sInglorious Basterds, which premiered at Cannes. While People is coming out with their Brangelina cover story this week, Star Magazine is added to the Brangelina/Aniston rumors with its own cover story. In fact, Star goes so far as to claim that Pitt and Aniston are already getting back together, and that they had a "secret hotel hookup"

Star claims to have gotten the info from Aniston's limo driver. The magazine goes on to say that Aniston and Pitt have been meeting and "texting" with greater frequency for weeks - which is how long the Brangelina rumors have been drifting around.

As the rumors get uglier, Brangelina's reps have only had a few official comments about it, saying that they are still together. However, not much else has happened officially to assure Brangelina fans that the rumors aren't true.

Newsbreak: Govinda-Riteish To Perform Together at IIFA

David Dhawan is a very happy man. And it’s not only because he’s making back-to-back movies, AND judging a reality show Hans Baliye during the time of recession.

Cast members of David’s latest directorial offering Do Knot Disturb are going to IIFA. “Now that the strike (of new releases in multiplexes) is over Govinda and Riteish Deshmukh who are in the film will be performing live at IIFA.”

David heading to Macau with his wife and images from Do Knot Disturb to be shown at the event.

David also intends to do a music video featuring the entire cast of Do Knot Disturb. “I want Sushmita, Lara, Sohail, Riteish and Govinda. We want to promote Do Knot Disturb in a big way and release around Eid.”

This being David’s first film with producer Vashu Bhagnani in years, David is naturally very concerned. “It has to go right. I’m very happy with the film. The strike ended at just the right time. There was hardly any shooting going on. Medipersons had nothing to write so they were making up stories.”

Two Indian schemes in finals for global green energy awards

Two pioneering schemes in India are among the finalists for this year's Ashden Awards for Sustainable Energy, the organisers of the awards have announced.

First finalist, French charity Groupe Energies Renouvelable Environnement et Solidarites (GERES), which works with local groups in Ladakh to help farmers grow fresh vegetables year-round in simple passive solar greenhouses. The result is the availability of spinach, coriander, onions, garlic and strawberries in the markets of Leh even when the temperature is well below freezing point.

The other finalist from India, Saran Renewable Energy Pvt. Ltd in Bihar, one of the finalists, has installed a new gasification system that generates electric power for 11 hours a day using locally-sourced biomass, providing a popular, sustainable, and cheap alternative to an unreliable grid supply. The 220 MW of electricity produced in a year is currently sold to 10 businesses which previously used diesel generators, as well as farmers, a school and a clinic. The result is a better-quality and more reliable electricity supply that also prevents the emission of about 200 tonnes of the greenhouse gas carbon dioxide every year from the 77,000 tonnes of diesel that would otherwise be used, and helps to secure income for the 100 local farmers who supply the biomass, the organisers of the London-based awards committee announced.

Ashden Awards for Sustainable Energy recognises the efforts of individuals or organisations in the deployment of locally-available renewable energy in the developing world with the aim of combatting climate change and reducing poverty. The Award carries a total prize tag of £350,000 ($567,000), which will be used to expand and promote these projects.

Other finalists are from the US, China, Nicaragua, Uganda and Ethiopia. The winner will be declared June 11.

More Practicable Cheaters Diet

Cheaters diet won't flunk us in Fitness 101 when caught. It
will even improve our dieting efforts. In fact, cheaters diet
makes rigid dieting a delight and an adventure.

Often, cheating is bad, but not if we want to stay on a diet
longer. Cheating actually helps most dieters stay on a weight
loss program longer than others on extra rigid ones. So, here's
the hot cheaters diet which makes it easier to stay on the
regular programme.

Fitness and diet gurus would probably frown at the idea but
more people are discovering the effectiveness of cheaters diet.
The idea is to diet 5 days a week and then give ourselves a
2-day break when we eat what we want reasonably. Here are some
reasons why.

First, it's a psychological thing, a reward incentive to make
the program always attractive. We worked hard 5 days, 3 meals a
day, to stick to a strict diet. Weekends are apt opportunities
to reward ourselves for a job well done. This keeps us
interested and glued to the diet through the week. Cheaters diet
should probably be renamed Rewarded diet.

Some avoid weekends as cheat days. They figure weekends enable
them to go out with friends and thus eating tends to be
overdone. So they choose 2 week days instead of weekends as
cheat days. They think this helps them more with their cheaters
diet as eating spree is more subdued when done alone or with
fewer company.

Second, cheaters diet helps our metabolism revive to normal
levels when a controlled surge of calories is given our bodies.
Remember that calorie reduction in our diet also reduces
metabolism rate. This is what causes stored fats in the body
because less fat burning takes place. This is aggravated when we
couple diet with exercise. It gets to a point when exercise
burns muscles instead of fats.

Thus, giving ourselves a break two days a week with
smorgasbords within reasonable amounts helps perk up metabolism
to keep our bodies burning fats. But remember, these eating
sprees should also be regulated and kept within reasonable
bounds. This is a good and feasible cheaters diet which makes it
mucg easier to survive your slimming program.

And take care to cheat for only 2 days. Don't go beyond this
limit or else cheaters diet becomes fools diet and it certainly
won't work. And if we go for foods included in popular
Mediterranean diet cheaters diet becomes even more effective.
The idea is to avoid too much fats and calories even on cheat
days. Also, it would do well to remember that fats and meats
take from 48 to 72 hours to completely digest.

And anyway, most dieters cheat now and then - how can you not
with the temptations floating around everywhere in today's day
and time. So why not stop torturing yourself with super strict
and almost impossible diets and adopt a cheaters diet to make
our cheats worthwhile and beneficial while dieting?

Eat More Often

Yes, you read this correctly! One of the main reasons people
fail to lose weight on diets is that their metabolisms are
always in a tailspin. If your body functions without food for
large periods of time, it goes into a kind of starvation mode.
This means that any food you later consume will be stored around
your midsection in case of future famine. This feast/famine
cycle can add pounds to your scale reading, even though you
might not think you are eating a substantial amount. Divide the
traditional three meals in half, and space the six meals 2-3
hours apart. Your metabolism will be working at a constant rate,
and you will see those pounds evaporate.

Reduce Your Stress

When your body is under stress, it produces a hormone called
cortisol. Cortisol accelerates fat build up and propagates the
storage of fat deeper into the cells and around the organs. Of
course, less fat around your belly, thighs, and hips might be
preferable to you, but the type of fat cortisol creates is
infinitely harder to shift. Try to journal, make daily plans,
and resolve issues that are causing you to panic and worry.

Exercise Regularly

Exercise has been known to be the Waterloo for many people who
are trying to diet. It can be hard to find time in the day to
hit the gym, but what is good to remember is that any exercise
is better than no exercise. That means walking instead of taking
the elevator, parking a little further from the mall, or

Most weight loss experts believe that it is safe to lose
between 1-3lbs in any given week. Therefore, when you set your
goals, you should strongly consider this. If you wanted to lose
60lbs for example, you might set short, medium, and long term
goals using an average weight loss of 2lbs per week. You will
reach your target in a healthy time and look and feel fantastic.
Unrealistic goal setting is the downfall of many dieters, so
make sure you do your research!

Eat Whole Foods

Whole foods are natural foods which generally come from the
ground. Whole foods contain no nasty additives, no man-made
trans fats, and no preservatives. Whole food is synonymous with
healthy food. Whole foods are generally lower in cholesterol,
lower in sugar, and don't impact your waistline in the same way
as processed alternatives. If you are able to find an organic
option, this is better still, as it means that your food is
officially free from pesticides, steroids, and hormones.

Weight loss can be an enjoyable and exciting journey. Remember
